Cruising into Health -Your Voyage to Well-Being
You are embarking on the most enjoyable vacation imaginable. Yes, it is a vacation
in the sense of sun, leisure, and exotic locales. But it is much, much more than
that. It is a vacation from old habits and old foods. It is the beginning of a whole
new way of thinking about yourself.
This week promises a wonderful opportunity to understand the how's and why's of
healthful eating-while someone else does the cooking-all in the company of others
who share this journey with us. Most people go through their entire lives never
having eaten the foods that truly promote good health for even a day. Deluged by so
many conflicting messages about diet and health, they have never gotten straight
answers to their questions. But you'll find them here. The faculty-diverse,
knowledgeable, and experienced-also cover the other keys to health: physical
activity, stress-reduction, meditation, and many more.
Let me encourage you to take the adventure for all it is worth. Some concepts and
some tastes may be new to you. Many come from centuries' old traditions, proven by
the latest science. Experiment and enjoy them. If you've always wanted to get on a
healthier path, it couldn't be easier. You're cruising right into it.
Lecture 1: Ethical Issues in Food Choices
An increasing number of people are motivated by the effects their eating habits may have on the world around them—the animals, the environment, and other people. New concerns about global climate change and the spread of emerging diseases, such as avian flu, highlight the fact that our nutritional decisions send ripples far and wide. This lecture looks at these bigger-picture concepts and how they can be motivators for change. Most importantly, it takes an optimistic view of how we can improve the world we live in.
Lecture 2: Uncle Sam Wants You Fat
It’s not just weak will or gluttony that has fueled the spread of less-than-healthy eating habits. Surprisingly, our own government has been encouraging the worst in us, too. Through promotional programs for high-fat foods and subsidies that reward unhealthy habits, Uncle Sam has sometimes been his own worst enemy. This presentation details the programs the government never told you about and gives a prescription for making things right.
Lecture 3: An Intensive Plant-Based Diet for Diabetes Management
Diabetes is more prevalent than ever. For many individuals, the diagnosis means endless doctor visits and frequent trips to the pharmacist. However, recent research has shown that diabetes can be controlled, and even reversed, with an easy-to-follow plant-based diet. By sticking to a few basic principles and making simple lifestyle adjustments, individuals can enjoy a surprising degree of control over diabetes.
Lecture 4: Survivors Handbook: Eating Right For Cancer Survival
For many years, people diagnosed with cancer have fought back, using healthful diet changes. But do these diet changes really help? Until recently, evidence of benefit came mostly from individual reports. For skeptics, that really wasn’t enough. Now, researchers are putting healthful diets to the test, and the results are starting to come in. It turns out that diet changes are every bit as powerful as we’d hoped. In this lecture, we will focus on new findings on survival from breast cancer and prostate cancer, looking at the results of recent studies.
