Cooking Class 1: Calling all Cookie Lovers
No matter what age you are – everyone loves cookies. In my class, I’ll show you how to make scrumptious cookies using whole grain flours such as barley, oat and rice, healthy sweeteners and nuts and seeds. You’ll learn techniques to perfect the size and shape of your cookies (very important for a beautiful looking cookie), how to make soft or hard cookies (and not eat the dough) and how to eat as many cookies as you want and still keep your shape (I’m still trying to figure this out). There will be plenty of these amazing yummy jewels to go around – so come raid the cookie jar with us.

Cooking Class 2: What’s for Dinner? 
Entrees, main courses, the main deal, this is often a part of the meal that people struggle with especially if you are turning a friend onto healthy eating, trying to impress a dinner date or entertaining. In this class, I’ll show you how to elevate whole grains and plant proteins to a higher culinary level. These main course recipes will ‘wow’ your friends and family every time.

Cooking 3: Healthy Hearty Sandwiches 
Sandwiches have gotten a bad rap in our fast food culture. This class will move to redeem the less than stellar reputation sandwiches have and show you how to prepare sandwiches that are fun and healthy. You will learn quick and easy recipes using plant proteins and vegetables. I’ll show you how to marinate and grill tofu or tempeh to use in a sandwich or wrap as well as in a main course. 

Cooking Class 4: Squash, Squash and More Squash Dishes
As important as it is to eat our daily winter squash, don’t you get tired of just steaming or baking squash or making the one squash soup? In this class, we will explore new and exciting ways to use the many varieties of squash in both healing and gourmet recipes.
I will identify the different types of seasonal squashes and show you techniques on how to properly and safely cut squash. I’ll prepare my absolute favorite squash dish – Kobacha stuffed with the exotic grain, amaranth and teach you how to make a medley of squashes for a popular holiday dish.
